Global Flavors & Fragrances (Three-Track Review)
Separating aroma chemicals, naturals and compounds
Flavors and fragrances is a formulation-and-compliance business, not a molecule business. Under a single tariff code, the export unit value of an aroma chemical and of a compounded fragrance can differ sevenfold. This sector covers food flavours, fine fragrance and home care fragrance, tobacco flavours, and the upstream layers: synthetic aroma chemicals and natural materials such as essential oils, concretes and oleoresins.
The three tracks barely overlap: aroma chemicals compete on process and scale, naturals are constrained by origin and harvest, and compounds compete on formulation libraries and regulatory dossiers. Lumping them together distorts conclusions such as 'China's share' — in 2024 China's HS3302 exports averaged USD 10.35/kg while Switzerland shipped the same code to the US at USD 65.37/kg.
Global size sits in a USD 30.1–33.6 billion range for 2025 depending on statistical boundary, with ten-year CAGRs of 5.0%–7.1% across institutions. Headline size is not the interesting question here; structure and unit value are. The top four groups hold over half the market and their moat is formulation libraries and compliance files, not capacity.
China's signal is growth without high growth: roughly RMB 46.5 billion in 2024 and RMB 48.3 billion in 2025, both below the RMB 50 billion target in the 14th Five-Year plan. Meanwhile the export price of vanillin halved in two years (USD 22.58 to 11.30/kg) and the EU's 131.1% anti-dumping duty took effect on 13 June 2025 — the cost advantage of commodity aroma chemicals is being offset by trade remedies, leaving bio-synthesis and higher-value grades as the way out.
Different statistical boundaries yield different sizes for the same market; whether aroma chemicals are included and whether pricing is ex-works are the main drivers. We list them side by side rather than picking one — cite the definition and year you use.

Shares come from different years and bases; use them for order of magnitude only. A commonly cited downstream split is food & beverage 65%, fine fragrance 25%, other 10%.
| Segment | Main product families | Structural reference |
|---|---|---|
| Food flavours | Beverage, dairy, bakery, savoury and confection flavours; spray-dried and emulsion systems | Flavors account for 69.2% of the total (2024, Market.us) |
| Fine fragrance and beauty | Perfumery compounds, personal care and beauty fragrancing, fragrance ingredients | Fine fragrance is roughly 25% of downstream demand |
| Home and fabric care | Detergent, softener, cleaner and air care compounds; alkali stability and longevity technology | Tracks the home care market, slower than food and fine fragrance |
| Tobacco flavours | Cigarette casings, e-liquid flavours, heated-tobacco flavours | Heavily regulated; China is the single largest market |
| Aroma chemicals | Vanillin and ethyl vanillin, menthol, benzaldehyde, cinnamaldehyde, synthetic musks, terpenoids | Vanillin export price halved in two years: USD 22.58 to 11.30/kg |
| Naturals and essential oils | Citrus and mint oils, floral concretes, oleoresins, absolutes | Natural 55% vs synthetic 45% (2024 basis) |
The top four groups hold over half the market; their moat is formulation libraries, regulatory dossiers and customer co-creation rather than capacity. Chinese suppliers concentrate in aroma chemicals and scale-driven grades, at roughly one seventh of the Swiss compound export price.
| Company | Positioning |
|---|---|
| Givaudan 奇华顿 | Global leader in both flavours and fragrances; 2024 group sales CHF 7,412 million |
| DSM-Firmenich | Merged fragrance, taste and health group; about EUR 12.8 billion revenue |
| IFF 国际香料香精 | Flavours combined with ingredients; 2024 net sales USD 11.48 billion |
| Symrise 德之馨 | Fragrances, flavours and cosmetic ingredients; about EUR 5.0 billion sales |
| Takasago 高砂香料 | Japan's leading house, among the global top five |
| 新和成 NHU | Largest Chinese flavors and fragrances business; RMB 2.105 billion in 2025H1 |
| 华宝股份 | Leading Chinese tobacco flavour house; flavour gross margin once reached 71.87% |
| 亚香股份 | Natural and synthetic aroma chemicals; nearly 300 commercialised products |
These judgements are compiled from public sources and indicate direction rather than precise forecasts.
The EU's 131.1% anti-dumping duty on Chinese vanillin took effect on 13 June 2025 (Implementing Regulation (EU) 2025/1151), covering vanillin and ethyl vanillin above 95% purity; the US preliminary determination of 8 January 2025 set rates at 186.20%–379.87%. The affected layer is single molecules, not compounds.
For 2024 HS3302 exports to the US: Switzerland USD 65.37/kg, Germany 28.85, China 9.04, Canada 5.24. Switzerland hosts Givaudan and DSM-Firmenich and ships compounds; China ships aroma chemicals and semi-finished blends. The gap is product tier, not FX or cost.
Regulation (EU) 2023/1545 expanded the list of fragrance allergens requiring declaration, and from 31 July 2026 non-compliant products may not be placed on the market. Together with IFRA's 51st Amendment, formulation and safety dossiers become the real entry barrier to the EU, favouring larger houses with regulatory teams.
Roughly RMB 46.5 billion in 2024 and 48.3 billion in 2025, below the RMB 50 billion target of the 14th Five-Year plan, growing about 3.5%–3.9%. Domestic concentration is low and single products are commoditised; the structural openings are bio-synthetic routes (fermentation vanillin, bio-based terpenoids) and overseas plants that sidestep trade remedies.
